Today, I’ve got an incredible treat for you all—our delicious Pumpkin Soup with a topping you won't be able to resist: HarvestBox Crispy Chickpea Chips! Yes, you heard that right. Our beloved Crispy Chickpea Chips are making a guest appearance in this warm, spiced, and scrumptious soup.

Get ready to elevate your dinner menu in the most mouthwatering way possible. 

Ingredients You'll Need:

  • 2 tbsp olive oil
  • 1 brown onion, finely chopped: For that aromatic foundation.
  • 2 sticks of celery, chopped
  • 3 garlic cloves, crushed
  • 1 tsp ground cumin & 1 tsp ground cinnamon
  • 1 litre vegetable stock
  • 1 kg butternut pumpkin, peeled and chopped
For the Spice Infused Oil:
  • 1 tbsp olive oil, extra
  • 1/2 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
To Garnish:
  • 1 bag of Harvest Box Sea salt Cripsy Chickpea Chips (85g)
  • Extra Sour cream
  • Chopped coriander
Let's Make Magic in the Kitchen!

Step 1: Build the Flavour Base
In a large saucepan, heat 2 tablespoons of olive oil over medium-low heat. Sauté your finely chopped onion until it becomes translucent and starts singing sweet tunes to you. Throw in the celery, garlic, cumin, and cinnamon, stirring the pot for about 30 seconds. It should smell like a spice market by now!

Step 2: The Pumpkin’s Dive
Pour in the vegetable stock and introduce the butternut pumpkin to its flavourful bath. Bring the pot to a roaring boil, then simmer it down to medium-low. Cover and let it cook for about 20 minutes or until the pumpkin is tender enough to melt your heart.

Meanwhile, as the soup is simmering, let’s create some magic oil! In a large fry pan, add an extra tablespoon of olive oil along with the paprika, ground coriander, extra cumin, and sea salt.
